There's little bit of Peranakan, French and some Thai or even Japanese flavors going on at P Bistro, which makes it difficult to truly nail it down to any particular cuisine.
Yet one should not dismiss this as just another bistro as this place is backed by solid cooking from a Le-Cordon-Bleu-Paris trained head chef who whizzed competently between the savoury and sweet boundaries.
For instance, traditional heritage dishes such as Nyonya Fish ($18) celebrates Southeast Asian flavors by incorporating the sweet, zesty and spicy into the homemade Peranakan sauce for the dory fish fillet. Together with the healthy multi-grain rice and achar, this makes a wholesome meal especially for anyone looking for that spicy oomph.
However, the Asian Red Curry Pasta was thwarted by a rather salty and ketchup-like sauce which could be liven up with more spice. The Duck Confit ($28) boasted a delectably crispy exterior and pull-apart meat but again, leaning on the salty side and required more cranberry jam to balance the taste. I enjoyed the lightly salted and crisp skin of the Kuhlbarra Barramundi White Fish Fillet ($26) which is delicious but quite a normal dish that is available easily elsewhere.
Nonetheless, the Tangy Pomelo was a unique and finely curated salad. The vibrant plum-like taste of the Tamarind sauce enhanced the sweetness of this seasonal red fruit from China, with a good dose of crispy shallots that added crunch and fragrance.
Desserts are testimonial to the chef's solid foundation in classic French pastries as the sweet selection ranging from tangy passionfruit tart ($4) to the crunchy Palmiers ($1) are deftly executed with quality ingredients such as Lurpak Butter. Mont Blanc tends to be overpoweringly sweet and at times cloying, but the version here ($8.50) takes on a chocolate overhaul by replacing the meringue with some fudgy chocolate within a crumbly base.
Made with coconut oil, the Coconut Pandan Chiffon Cake ($6.50) remained pleasantly fragrant and moist despite the long hours of chill. Merely lightly sweetened, this is the cake I want to indulge again with a cup of Salted Caramel Latte or warm Mocha. Located a walk's distance away from the prime shopping malls in Orchard Road, this could be the ideal spot to unwind after a day's work.
